Where my Health Journey Began...
A few years ago I was a very different person than I am today. I lived alone and comforted myself by binging on Trader Joe's orange chicken, ice cream and other sweets every night. I smoked a half a pack of parliament light cigarettes daily and I worked at bar which kept me up until 3am or later sometimes. When I moved to Florida I was already overweight when I started working at a restaurant where I ate fried foods and cheeseburgers regularly. Finally, I gained so much weight I got to the point where I couldn’t put my pants on anymore and had to buy a new wardrobe. I tried exercising here and there but never lost any weight so I gave up. I felt tired, depressed, I was getting sick every other month, I was grumpy all the time, and I had really bad eczema. I was disgusted with my body.
I finally decided enough is enough! I joined a gym and started running. I was nervous at the gym, I felt like people were judging me because I was overweight and out of shape. I visited a local run store and got a new pairs of shoes and hit the road. Motivated and held accountable by a friend I decided to sign up for my first half marathon. I read a few books about running and created my own training plan. I completed my first half marathon in 2013 and was hooked on running. I did lose weight but not as much as I wanted to. I did good running but I was not as good as I wanted to be. I still felt like something was missing. I became interested in plant based nutrition so I started reading books and watching documentaries. I continued to learn more about plant based nutrition and then finally found The China Study, by Colin Campbell and my life was forever changed. I found that a plant based diet was the key to unlock boundless energy and has helped me to discover my life’s work.
In the last 6 years I have ran over a dozen half marathons, 3 full marathons, lost 25 pounds and have created my own Holistic Health Coaching business. I follow a diet that I have found to work perfectly for me. I eat whole plant foods and have found healthy ways to prepare my favorite baked goods like brownies, pumpkin bread and fulfill my sweet tooth with dark chocolate regularly. Although I do still enjoy french fries, chips, and sugary cereal here and there I try to minimize the amount of processed food I eat. I have been dabbling with a meditation practice to manage stress and honor my body for all that it does.
I believe that being “healthy” is a lifestyle and a journey. No one is perfect, no matter how healthy you are there is always another level. Also, no matter where you are now there is always a starting point. That is why I consistently encourage my clients to create and strive to accomplish goals that stretch them out of their comfort zone. We are all capable of more than we know to be true now.
I also believe that our health impacts many facets of our lives just as our health can determine the quality of our lives. When I work with clients I take a holistic approach to changing health, my work is more than just a diet plan because health is about more than what you eat. We will learn, laugh and cry as we reach a new level together.

I have consistently put myself in a position of stretching beyond my comfort zone which has led me to accomplish goals I never would have imagined I would ever complete. If you told 20-year-old Amanda that she will have ran multiple marathons and started her own business in the next 10 years she would have laughed in your face! I never in my wildest dreams thought I would be here. Now that I am, I truly believe that each one of us has the potential to accomplish anything we desire because I am no different than you!
